Overview
This course provides students with an in-depth exploration of food as a cultural, social, and global phenomenon. The course
investigates the ways in which culinary practices, ingredients, food rituals, and dining traditions articulate cultural identity and embody historical, economic, and intercultural influences across societies. Through a comparative lens, students will examine global cuisines, food symbolism, and modern gastronomic trends shaped by migration, globalization, sustainability, and media. By the end, learners gain not only knowledge but a transformed appreciation for the power of food in shaping our world.
On completing the course, students will be able to:
- Illustrate global culinary traditions by relating historical, sociocultural, and economic influences on contemporary gastronomy practices.
- Analyse the cultural meanings, values, and symbolic roles of food across societies, demonstrating informed appreciation of culinary diversity.
